"Help yourselves to my cooking"

Just a little pretentious, sure.  How can a Cajun resist using the little bit of French he knows though?  My favorite style of cooking centers in the particular cuisine found along the banks of Bayou Lafourche in southeastern Louisiana.   This cooking style, which I call Bayou cooking, is an ever evolving cuisine.   Bayou cooking is rich in herbs and spices and many of the recipes begin with the phrase 'First you make a roux'.

My mom is an excellent cook and has combined the flavors of her own mother's meals mixed with some modern techniques and the advantage of a more healthful diet.  While growing up, my sister and I picked up more than we imagined watching mom prepare meals for the family.  Once I was out on my own and had to cook for myself, much of her training came back to me.

Now, armed with cook books and recipe collections from some of the best chefs from the Bayou, I can manage a reasonable facsimile of the food from home.   Learning to use these tools became a survival skill once transplanted from the womb of my native Louisiana.  It was pretty easy to make do with some of the fantastic restaurants found in New Orleans.

In this section of my web site, I hope you can find some recipes that are practical and delicious.  My favorite recipes are simple to make and usually quick to make.  There are also some cooking tips which will prove useful in preparing these recipes.  This section will grow slowly though.  I am being very cautious about publishing only recipes which are truly mine or given to me by friends and/or family.
